Our Story

Two Paths, One Kitchen

This restaurant was born from the meeting of two distinct paths.

Bo grew up in Ayutthaya, Thailand, where she learned to cook alongside her grandmother while helping her family sell noodles from boats on the Chao Phraya River. For her, Thai cuisine was never simply a skill to acquire. It is a living heritage, shaped by repetition, instinct, and memory since childhood. She later moved to Paris, where she continued to refine her craft in some of the city's most respected Thai restaurants.

Pedro trained at Ferrandi Paris and worked at Le Céladon, Sellae and Mensae. His path is marked by precision and rigor, built in the demanding world of fine dining before bringing that craft to Bolan.

Together, we have created a cuisine rooted in Thai tradition and guided by French technique. Our approach remains deeply faithful to its origins, welcoming influences only when they serve to strengthen the accuracy and clarity of flavors. This same commitment to integrity is reflected in our wine list, a natural and low-intervention wine selection chosen for its sincerity and expression of terroir.
